What Is Rogan Josh Curry?

Rogan Josh is a rich, aromatic curry with roots in northern Indian and Kashmiri-style cooking, known for its deep red colour and warming spices. In the British curry-house style it is a medium curry, built on a slow-cooked onion and tomato sauce, with Kashmiri chilli bringing colour and a rounded warmth rather than sharp heat.

What Does Rogan Josh Taste Like?

Rogan Josh tastes rich and aromatic rather than sharp. The sauce is deep and savoury with a rich tomato base, and the spicing — coriander, cumin, garlic, ginger and fragrant warm spices — is layered rather than fiery, with a slightly smoky edge.

Its finishing blend brings garam masala, dried fenugreek leaves, cardamom and cinnamon, which give the curry its fragrant finish.

How Hot Is Rogan Josh?

Rogan Josh is rated Medium, in the middle of the Curry Club range. The heat is rounded and warming — noticeable, but designed to sit behind the flavour rather than in front of it.

If you want more, the kit includes an optional whole dried Kashmiri chilli for an extra kick.

Where Does Rogan Josh Come From?

Rogan Josh has roots in northern Indian and Kashmiri-style cooking. Our version is inspired by the British Indian restaurant style, using a slow-cooked onion and tomato sauce, rather than recreating a regional recipe.

What Goes Well With Rogan Josh?

Rogan Josh works well with lamb, chicken, paneer or vegetables, served with rice, naan or chips. Fresh coriander and a spoonful of plain yoghurt stirred through at the end are both optional extras.

Rogan Josh vs Other Curries

  • Rogan Josh vs Dopiaza

Dopiaza is milder and sweeter, led by onion. Rogan Josh has more depth from Kashmiri chilli and warm spices, and a step more heat.

  • Rogan Josh vs Balti

Balti is a notch hotter and tastes fresher and tangier. Rogan Josh is the richer, more aromatic choice.

  • Rogan Josh vs Madras

Madras is hotter, sharper and more tomato-forward. Rogan Josh is rounder and more fragrant.

How to Make Rogan Josh at Home

Rogan Josh is a forgiving curry to cook at home. Its character comes from layering rather than heat: the base spices are cooked into softened onion first, and the fragrant finishing blend goes in near the end to set the final flavour.
