What Is Madras Curry?

Madras is a hot, bold British Indian restaurant classic, known for its deep red colour, lively chilli heat and rich tomato-based sauce. It is deeply spiced and savoury, with a rounded fire that is hotter and sharper than Rogan Josh but stops short of the very hot Vindaloo.

What Does Madras Taste Like?

Madras tastes deep, savoury and tomato-rich, with plenty of spice behind the heat. Coriander, cumin, garlic, ginger, chilli and curry leaves are layered into a slow-cooked onion and tomato sauce.

Its finishing blend adds curry leaves, fenugreek and amchur (dried mango powder), which give Madras its distinctive, slightly tangy finish.

How Hot Is Madras?

Madras is rated Hot. The heat is lively but rounded, and there is enough depth in the sauce that it still tastes of much more than chilli.

The kit includes an optional whole dried Kashmiri chilli if you want more heat, and plain yoghurt or cream stirred in at the end is an optional finish.

Where Does Madras Come From?

Madras has roots in South Indian-style cooking and was made famous in British Indian restaurants for its deep red colour, lively heat and rich tomato-based sauce. Our kit follows that British curry-house style.

What Goes Well With Madras?

Madras works with chicken, lamb, prawns, paneer or vegetables. Serve it with rice, naan or chips, with fresh coriander scattered over at the end if you like.

Madras vs Other Curries

  • Madras vs Rogan Josh

Rogan Josh is medium and more fragrant. Madras is hotter, sharper and more tomato-forward.

  • Madras vs Jalfrezi

Jalfrezi is a little milder and fresher, built around green pepper and onion. Madras is all about deep spice and tomato.

  • Madras vs Vindaloo

Vindaloo is hotter again and adds a sharp vinegar tang and mustard bite. Madras is the deeper, rounder hot curry.
