Madras curry in a bowl — deep red British Indian restaurant-style curry with visible spices

Madras is a bold, spicy curry inspired by the British Indian restaurant classic. It is known for its deep savoury base, lively chilli heat and rich tomato-led sauce.

Our version is built around a slow-cooked onion and tomato sauce layered with coriander, cumin, garlic, ginger, chilli, curry leaves and warming spices.

The result is a hot curry with proper depth, a rounded fire and that unmistakable curry-house flavour. It works beautifully with chicken, lamb, prawns, paneer or vegetables.

Madras recipe card

You will need:

  • 400–500g Chicken, Lamb, Paneer or Veg
  • 1 large onion
  • 1 x 400g tin tomatoes
  • Rice, Naan or Chips to serve
  • Optional: fresh coriander
  • Optional: 1–2 tbsp plain yoghurt or cream

Ingredients

Sachet 1 — Base Spice Mix

Ground coriander, ground cumin, paprika, turmeric, garlic powder, dried ginger, ground fenugreek / methi, ground black pepper, ground cinnamon, ground cloves, ground cardamom.

Sachet 2 — Madras Finishing Spice Mix

Hot chilli powder, Kashmiri chilli powder, garam masala, curry powder / Madras curry powder, dried curry leaves, dried fenugreek leaf / kasuri methi, amchur powder / dried mango powder.
